The new generation of Spanish winemakers is reinvigorating the country's time-tested vineyards -- some of them well over 100 years old -- and growing superior grapes that belie the vines' age. Winemaker Laura Lorenzo of Daterra Viticultores creates her Camino de la Frontera Tinto from obscure indigenous grapes grown on an old vineyard near Salamanca in northwest Spain, producing a wine that is "light-bodied but full of energy and life, and absolutely delicious," writes Eric Asimov.

As a way of reflecting on the time she spent in her uncle's shop in Taiwan, cookbook author Hsiao-Ching Chou makes this version of shao bing, a sesame flatbread breakfast dish that is often stuffed with fried strips of dough. The dough for shao bing is made with a combination of boiling water and cool water to achieve a pliable texture so that it can be rolled out thinly to create a layered interior that is similar to laminated pastries.

Chefs including Tiffany Derry of Roots Southern Table in Farmers Branch, Texas, and Tim Hollingsworth of Otium restaurant in Los Angeles are partnering with a new venture called World Chef to create cooking lessons and meal kits for consumers. The platform, which debuted Feb. 15, will release new video lessons along with related meal kits that viewers can use to cook along with the videos, and each lesson will also include a shopping list for people who choose to buy their own ingredients.

Host Hotels & Resorts accompanied a glowing fourth-quarter earnings report last week with the announcement it's acquired a 49% interest in Noble Investment Group. Host issued $56 million of operating partnership units and paid $35 million in cash for the private equity firm that specializes in upscale select-service and extended-stay hotels.

The gambling, hospitality and entertainment company Hard Rock wants to build a $2 billion casino in New York City and is considering at least three possible sites, according to Chair Jim Allen. Hard Rock is also slated to open a new hotel in Manhattan in April.

IHG Hotels & Resorts voiced high hopes for the end of the pandemic last week after reporting a pretax profit of $361 million for 2021, following 2020's pretax loss of $280 million. The company reached a total net profit of $266 million, while revenue per room jumped 46%.

Drake's name dropped from San Francisco hotel

The Sir Francis Drake Hotel in San Francisco is losing the name it bore for 94 years in one of several California efforts to cease memorializing the famed explorer in light of his involvement in slave trading. The 416-room hotel, bought by Northview Hotel Group last year for about $157 million, is scheduled to reopen this spring as The Beacon Grand after being closed since the onset of the pandemic.
