Michelin-starred Chef Vito Mollica’s creativity will explode at Quadrum restaurant at Four Seasons Hotel Moscow, where guests may have an extraordinary gastronomic experience and meet the Italian chef in person, April 4-6, 2017.
Vito Mollica is a staunch advocate of Italian food. Inspired as a young boy by the local specialities prepared by his mother, he has spent his career seeking to preserve the culinary ecology of his home nation by supporting small producers, old-style markets and local varieties. Vito is always in search for the best products and he builds strong relationships with suppliers, preferring small farms.
Now he bases his kitchen philosophy on “knowing the man behind the produce,” personally scouring the markets for independent producers who share his passion for quality. “The main value of any dish is the quality of the ingredients,” he explains. “Then the more simply you cook the ingredients, the more you will allow the flavour to come through.”
Specially for Four Seasons Hotel Moscow, Vito Mollica designed three exclusive five-course set menus. All five courses are followed by set of Geoffroy and Pierre Gimonnet et Fils Champagne provided by the Hotel’s partner Simple company. Four Seasons Hotel Moscow Chef sommelier Alexey Nesmeyanov has selected Champagne that emphasises the flavour of each dish. Guests will have a chance to learn more about the Champagne terroir from the main winemakers Didier Gimonnet and Jean-Baptiste Geoffroy.
