Stephanie Izard's Girl & the Goat to debut in L.A.

Chicago chef Stephanie Izard will open a Los Angeles location of her Girl & the Goat restaurant in the city's Arts District on July 15. The menu will build on the globally influenced, family-style meals served at the Chicago location, with new dishes inspired by the local seafood and fresh produce of California.
Full Story: Eater (6/28), Los Angeles Times (tiered subscription model) Noma chef Rene Redzepi is preparing to launch a line of products under the name Noma Projects, starting with a duo of garums produced in the same fermentation lab that creates ingredients for the famed Copenhagen restaurant. Chefs at Noma use garums -- fermented condiments similar to fish sauce -- to add umami to sauces, soups and other dishes, and the first two products to debut will be an egg white variety and one made with smoked mushrooms.

Pinot noir and other cool-climate grapes are being put to the test this week at vineyards in Oregon and throughout the Pacific Northwest, where a heat dome is producing record-high temperatures and winemakers are not sure what toll the extreme weather might take on their fruit and vines. Red grapes are susceptible to sunburn, and extreme heat can break down the grapes' acidity and increase evaporation, according to Megan Kathleen Bartlett, an assistant professor of plant biology at the University of California, Davis.
