
Mandarin Oriental, Singapore is delighted to announce the appointment of Mario Cittadini as Executive Sous Chef.
No stranger to Mandarin Oriental Hotel Group, Chef Cittadini joins the hotel from his previous role at Mandarin Oriental, Taipei, where he spent a few years as Chef de Cuisine of the hotel’s renowned Bencotto restaurant. At Mandarin Oriental, Singapore, Chef Cittadini will be responsible for overseeing daily kitchen operations, as well as assisting in menus development as well as managing and training of chefs.
Prior to that, Chef Cittadini, an enthusiastic team player, proved his leadership capabilities
when he took on the role of Executive Sous Chef at The Regent Beijing, China. He was directly overseeing renovation projects which included the hotel’s Italian restaurant as well as the in-room dining and Chinese banquet kitchens. The job provided Chef Cittadini with a unique skill set of kitchen design, staffing and establishing new operating standards.
Having built an extensive repertoire of knowledge and experience of more than 14 years,
Chef Mario Cittadini possesses a strong passion for food, wine and travel. His culinary journey began in a small restaurant in his hometown, Arezzo, Italy, before he pursued international stints in Michelin rated restaurants spanning from Norway, America, Spain and Australia.
A firm believer of using premium ingredients, Chef Cittadini holds true to his philosophy that the customers should always come first, while the chef and culinary techniques play a
secondary role.
