Known to be one of the most complex cuisines in the world, Balinese dishes rely heavily on an incredible variety of spices to balance the full-bodied flavours of seafood, meat and vegetables. A classic signature would be the Dojang Nakeng, a delectable prawn and squid salad mixed with lime and mint. Other appetisers to kickstart the meal include Sate Ayam, Sapi an Babi, irresistible chicken, beef and pork satay meat skewers; Sambel Be Tongkol, a refreshing concoction of tuna salad dressed with shallots and lemongrass; or a hearty bowl of Sup Buntut oxtail soup with vegetables.
Authentic Balinese cuisine demonstrates indigenous Indonesian traditions, with strong influences from Chinese and Indian regions, which are reflected in the Pesan Be Pasih, tender grilled fish served in banana leaf; creamy Bebek Menyanyat duck curry; Sambel Udang,prawns cooked in delicious spiced tomato sauce; and enticing Kambing Mekuah lamb stew.
Notable highlights featured at the sumptuous buffet spread will also include the signature spit-roasted Babi Guling, fragrant grilled suckling pig marinated in lemongrass and a tantalising medley of spices; alongside the Live Noodles Station serving the much-loved Soto Ayam – a spicy chicken noodle soup topped with eggs, vegetables and condiments, such as pickled Acar vegetables, and Tabia Lalah Manis, an aromatic chilli soy sauce.
